In this talk we discuss the surprising properties of the so called universal Beltrami equation, and its intimate connections with a specific Monge-Ampere equation. These relations also lead to immediate consequences on the minimisers of appropriate variational integrals and on the geometry of scaling limits of random structures, such as the dimer models.
